Basic Showpiece Production Afternoon Teas and Summer Dessert, College Certificate
Part time, one day per week. Monday 25th March to 24th June, 10.00 – 15.00
Take your patisserie skills to a new level by using sugar, pastillage and chocolate to create fabulous show pieces?
In addition, this ten week course will cover afternoon tea production and sensational summer desserts. Aimed for keen pastry cooks with some existing experience we can help you to build on your skills and expertise; no matter if you are working in the catering industry or a keen home cook.
Within this ten week course you will also cover the production of lighter, summer desserts and build on your baking skills to produce show stopping afternoon teas.
In addition to developing good practical skills in patisserie and confectionery you will learn the theory that underpins sugar work in various forms.
Taught by our professional pastry chef, you will work in our pastry kitchen. All ingredients and equipment will be supplied but some specialist equipment may be required.
No entry requirements are required but some basis culinary knowledge and skills will be an advantage.
How will I be assessed?
No formal assessment will take place but you will get regular feedback on how you are doing from your chef.
