Chocolate Work Skills and Techniques, College Certificate
Part time, one day per week. Monday 7th January to 18th March 2019, 10.00 – 15.00
Do you want to learn how to work with chocolate like a professional? Within this hands-on, 10 week course you will learn the basics needed to make and prepare chocolate products. You will build on these skills and learn how to temper chocolate and use it to make and fabulous desserts and centre pieces. You will mould white, dark and milk chocolates, make ganaches, and other chocolate confectionary
No matter if you are working in the catering industry or not, this course is designed to offer practical and theoretical help for the novice chocolatier through to the chocolate artisan, pastry chef, confectioner, baker and caterer; we can help you to develop your skills and expertise.
In addition to developing good practical skills in patisserie and confectionery you will learn the theory that underpins the production chocolate work.
Taught by our professional pastry chef, you will work in our pastry kitchen. All ingredients and equipment will be supplied.
No entry requirements are required but some basis culinary knowledge and skills will be an advantage.
How will I be assessed?
No formal assessment will take place but you will get regular feedback on how you are doing from your chef.
